- A piece of ginger, the size of your thumb, masterfully grated
- 3 tbsp of Thai red curry paste (ensure it aligns with your vegetarian/vegan preference)
- 1 tbsp of creamy peanut butter
- 500g of sweet potato, delicately peeled and cubed
- 400ml can of luscious coconut milk
- A 200g stash of fresh spinach
- The zestful juice from 1 lime
- Steamed rice, for a complete meal (only if you fancy)
- A handful of dry roasted peanuts, for that extra flair (up to you)
