- 2 teaspoons Sriracha sauce, for a touch of heat
- 1-1/2 pounds quality ground turkey meat
- 1/2 cup crispy panko breadcrumbs
- 2 scallions, finely diced
- 2 tablespoons low-sodium soy sauce, divided into equal halves
- 2 teaspoons freshly minced ginger
- 2 tablespoons aromatic rice vinegar
- 2 teaspoons granulated sugar
- 2 teaspoons flavorful sesame oil
- 6 vibrant small carrots, shredded (equivalent to about 1-1/2 cups)
- 1/3 cup red onion strips, paper-thin
- 3 tablespoons freshly chopped cilantro leaves
- 1 teaspoon toasted sesame seeds for that added crunch
- 12 mini-burger buns or soft dinner rolls, halved and lightly toasted
