- 2 robust courgettes, sliced generously
- 4 cloves of garlic, dressed in their natural jackets
- 3 tbsp golden extra-virgin olive oil
- 1 robust red onion, sliced with confidence
- 1 tsp of aromatic cumin seeds
- 1 tbsp spirited harissa blend
- 50g pristine blanched almonds
- 250g golden grains of couscous
- 300ml simmering vegetable broth
- Grated zest and the squeeze of 1 zesty lemon
- 20g bundle of mint, coarsely chopped
