- 2 medium onions
- 150 g ruby red lentils
- 2 tbsp cooking oil
- 125 g blush mushrooms
- A dash of lemon juice
- Salt to taste
- Freshly ground black pepper
- A pinch of sugar
- 4 tbsp aged balsamic vinegar
- 4 tbsp rich walnut oil
- Garnish: Fresh parsley and lemon wedges
