- 1 robust onion, meticulously minced
- 150g pre-mixed bulgur and quinoa grains
- A duo of thyme twigs
- 2 tsp plant-based bouillon essence
For the Lush Avocado Layer
- 1 ripe avocado, partitioned and cubed
- 2 sun-ripened tomatoes, carved into segments
- 4 tbsp freshly snipped basil
- 6 Mediterranean Kalamata olives, bisected
- 2 tsp first-press olive oil
- 2 tsp orchard-fresh cider vinegar
- 2 generous clutches of rocket leaves
For the Vibrant Beetroot Blend
- 210g canned chickpeas, sieved
- 160g beetroot, cooked and cubed
- 2 garden-fresh tomatoes, quartered
- 2 tbsp freshly plucked mint, chopped
- 1 tsp aromatic cumin seeds
- A few dashes of rich ground cinnamon
- 2 tsp pristine olive oil
- 2 tsp tangy cider vinegar
- 1 succulent orange, segmented
- 2 tbsp golden toasted pine nuts
