- 85g either pine nuts or flaky almonds, toasted to golden perfection
- A petite bundle of fresh herbs: coriander, flat-leaf parsley, and mint, coarsely chopped
- Freshly squeezed juice from 3 ripe lemons
- 1 tsp granulated sugar
