- 1 pack (270 g) fresh butter puff pastry (pre-rolled with baking paper, 42 x 24 cm dimensions; kept chilled)
- 20 g pine nuts
- 5 g breadcrumbs
- 5 tomatoes (around 750 g)
- 3 packs of mozzarella cheese (125 g each)
- Fresh basil stems
- 1/2 to 1 tbsp olive oil
- Fine sea salt to taste
- Freshly milled coarse pepper
- 2–3 tbsp verdant pesto sauce
- Aluminum foil
- Extra baking paper
- Dry peas for blind baking
